The real problem now is studying. It would be a piece of cake if you weren’t working at the same time. I like studying. When I was in college, I liked to study and really focused on my course. I keep things in balance. But now that I am also working, things are really complicated than I thought. It’s definitely not easy multitasking. Time management came into play the role. It is important that you can handle two things at the same time. So after working 8-9 hours a day, I need to get home as early as possible to study. I study for 5-6 hours and then I go to sleep. In a shallow bowl, whisk together the all-purpose flour, rice flour, cornstarch, sugar, salt, and pepper.
Add the ice water and beat until smooth. Set aside.

Drain the eggplant slices and use paper towels to remove excess moisture. Put them aside.

Pour the oil into a wok or dutch oven to a depth of 1 inch. Heat oil over medium high heat to 350F on a fry thermometer. If you don’t have a thermometer, stick a bamboo stick into the oil; if small bubbles immediately gather around the toothpick, the oil is ready.

Dip each eggplant slice into the batter, letting any excess drip back into the bowl, and then gently drop into the hot oil and lower the temperature of the oil.
